Five Minute Miso-Glazed Toaster Oven Salmon
Total time: 40 minutes Yield: 4 servings
• ¼ cup red or white miso
• 1/3 cup sake
• 1 tablespoon soy sauce
• 2 tablespoon vegetable oil
• ¼ cup sugar
• 4 skinless salmon fillets, 1 inch thick
Whisk together miso, sake, soysauce, oil and sugar. Rub mixture evenly over salmon surface. Transfer to a plastic zipper lock bag or sealable container. Marinate for 30 minutes.
Preheat oven at 250 degrees for 3 minutes. Cover the tray with aluminium foil. Rub excess marinade off salmon and place on bake tray. Broil until top surface is well charred and salmon is barely warm in the center for about 5 minutes. Use the foil to protect any areas that threaten to burn.
Tartines with ham and cheese
Total time: 15 minutes Yield: 4 servings
• 4 thin slice French bread
• 2 small apples thinly sliced
• ¼ pound ham, thinly sliced
• 4-6 ounces cheese, thinly sliced
Preheat oven to 200 degrees. Lay the bread on the wire rack and toast in the oven until just starting to brown on the edges (3-5 minutes). Remove from the oven and place on bake tray top with apple slices, ham and cheese. Bake in the oven until cheese is melted (6-8 minutes). Remove from the oven and place on a cutting board. Cut each toast into 4 pieces.
Peanut butter cookies
Total time: 10 minutes Yield: 2 servings
• 2 tbsp flour
• 1.5 tbsp peanut butter
• 1/16 tsp baking soda
• 1/16 tsp salt
• ¼ tsp pure vanilla extract
• 1.5 tbsp maple syrup
• 1tsp apple sauce
• Optional: chocolate chips
Mix dry ingredients, Add peanut butter and wet ingredients. Mix well and form into one or two cookies. Flatten into cookie shapes, preheat oven and bake in oven toaster at 250 degrees for 8-10 minutes.
